This is a step in making cake for wife with an ultimate birthday cake.

Ingredients to Make Cake
  • 3 cups flour
  • 1 3/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup dark cocoa powder
  • 2 cup milk
  • 2/3 cup vegetable oil
  • dark brown sugar
  • 1 cup granulated sugar
  • 4 eggs
  • 1 tablespoon instant coffee granules
  • 1 1/2 teaspoon vanilla extract
The Ingredients for Making Ganache
  • 6 oz semi sweet chocolate
  • 3/4 cup heavy whipping cream
The Steps to Make Cake
  1. Firstly, combine all ingredients in the large bowl. Pour flour, baking soda, salt, baking powder and cocoa powder and stir it until stuff together. 

  2. In the mixing bowl, pour the milk, vegetable oil, brown sugar, granulated sugar, eggs, coffee granules and vanilla extract. Just give it with a good mix. 

  3. After the ingredients are combined, stop the mixer and pour the dry ingredients into a large bowl. The batter is a little bit wet. So you have to mix it with low speed to avoid anything comes back at you. It is better to use the kitchen towel over the mixer. Then, after the batter is moistened, mix it with medium speed and beat if for about 30 seconds.

  4. The next step, prepare the cake tin. Actually, you do not forget to spray your tin to avoid the batter stuck into the tin. Then, divide the batter into 2 cake tins smoothly. Then, bake it about 45-50 minutes for 3500.

  5. For this step, you also have to make the meringues in the mixing bowl. To make it, you must put 2 tablespoons of Wilton meringue powder, 1 1/4 cup of water, and salt. Then, use a whisk attachment to stir it together until it's quietly foamy. Then, pour 2/3 cup granulated sugar, 1/2 teaspoon of vanilla extract. Wait until it stiff peaks. Then, add the cocoa powder into the mixing bowl.


  6. Prepare the piping bag and then pour the meringues batter into the bag. Next, take the parchment paper and put it on the rectangle pans. Then, pipe a dot at each corner of the pan to hold the parchment down. Furthermore, you must make to trace a disc following the outline of 8th" pan. It is used as the layer of the cake. Then, make nice little kisses of different sizes to decorate the top of the cake. Certainly, bake it at 250o for about 45-50 minutes.

  7. While you are waiting the cake and meringues cooked. It is time for making the crunchy peanuts. First, add the peanut butter and cream cheese into the mixing bowl. Stir it until it's creamy and smooth, then, add some confectioners sugar about 1 cup. Well, the peanut butter cream cheese icing is ready to use.


  8. After the cake and meringues are cool. Now, we are going to decorate the cake. First, prepare the cake, cut off the crowns and the cake into 2 thin layers for each cake. Make sure the meringues fit the cake, if that’s bigger, you can trim the side of it. 

  9. So, it's time to decorate. Prepare the pedestal and put 1 cake on it, then, spread out the peanut and cheese buttercream on the top and sprinkles some honey roasted peanuts for the first two layers. For the center of the cake, you put the meringues, press down firmly. Continue spreading the peanut buttercream to add the two others cake.


  10. After it's finished, covering all of the cake surfaces using the peanut buttercream and cool it in the refrigerator about 10 minutes. 

The Step for the Ganache
  1. Firstly, chop the semisweet chocolate finely. Pour the whipping cream and microwaved at 50% power for 1 minute. Then, take it out from the microwave and mix it together. After it's mixed, put it in the refrigerator about 15 minutes. 

  2. Take the chilled cake from the refrigerator. Then, pour the ganache over the top of the cake and make sure the ganache covering the top of cake surface. Then, guide it down the side and over the cake with a small spatula. 

  3. For more beautiful, you can ganache the cake with small meringues and some candy shards. For the last, sprinkling the peanuts around the meringues and candy shards. Do not forget to stick some candle on the cake. Finally, the cake is ready to eat.
