Happy Birthday Princess Cake

A Delicious Happy Birthday Princess Cake
A sturdy cake is what we need. Some of you may wince at the thought of a sturdy cake but do not worry the steps below lead you to make it simply. Sturdy does not mean dry and tough as a brick. Our basic cake recipe is dense enough for it to be stacked as high as a skyscraper, yet moist and delicious just like any other cake you have ever eaten – maybe even better! You may make the layers a day before decorating your happy birthday princess cake, just make sure to properly cover it with plastic wrap and store it in the fridge.
Before you make the cake, prepare three 6-inch round cake pans and one dome cake pan – grease and flour them. Here are the simple steps:
- 2 sticks salted butter
- 340 gram caster sugar
- 8 white eggs
- 420 gram cake flour
- 375 ml milk
- 2 ½ teaspoons baking powder
- 2 teaspoons lmond extract
- 1 barbie doll
Heat your oven to 180°C.
In the first mixing bowl, mix room temperature milk and egg whites as well as almond extracts until well blended, you do not need to use an electric mixer at this stage – just a fork would suffice.
In another mixing bowl, mix cake flour, baking powder and caster sugar with an electric mixer, then add butter (at room temperature), continue mixing it at low speed for about two minutes.
Add half of the milk mixture into the dry ingredients, beat it for about two minutes at medium speed, pour in the remaining half of the milk mixture and beat at high speed for one minute then divide batter evenly.
Bake it for 20 minutes and the cake is ready to lift.
2 sticks butter, gradually, add 4 cups of icing sugar and ½ cup strawberry puree. Whip them until well incorporated, add a few drops of pink food coloring to make the color pop.
Once you’re done, all you have to do now is cut the dome cake into two, and make a hole in the center of each layer – you can do it by using a doughnut cutter. Stack each layer one on top of the other, do not forget to frost each layer with generous a heap of strawberry frosting in between, careful to not cover the hole.
Once assembled, coat the whole cake with strawberry frosting. To achieve a smooth finish, run a piece of paper over the cake to get rid of the frosting. Strategically put the barbie doll in the hole, cover the side with frosting. This will look as if the happy birthday princess cake is the barbie’s dress, you may start decorating the cake with sprinkles or whatever you desire.
